Once everything is in the blender, start blending the ingredients until they form a smooth and creamy consistency. Depending on the power of your blender, this may take a few minutes. Be sure to stop and scrape down the sides of the blender if needed to ensure that all the ingredients are incorporated.

Continue blending until the mixture is completely smooth. The goal is to achieve a silky texture that resembles traditional sour cream made from dairy.

Once the chipotle sour cream reaches the desired consistency, transfer it to a serving bowl or container. It’s now ready to be enjoyed as a delicious dip, topping, or sauce for your favorite dishes.

Recipe Tips

  • Feel free to decrease the amount of sea salt to suit your needs or use a different type of salt. We like green salt as it has less sodium than sea salt.
  • Fresh raw garlic will have a more intense garlic flavor. If you would prefer to tame the garlic in the recipe, feel free to use 1/2 teaspoon of garlic powder instead. Using roasted fresh garlic would also be delicious, giving the garlic a sweeter flavor.
  • Chipotle chili powder can be spicy. If you want less heat, omit it. If you want more heat, increase it.
  • You could also experiment with adding canned chipotle pepper in adobo sauce. We opted for the simplicity of using ground chipotle chili powder.
  • The maple syrup balances the acid of the vinegar and lime juice. We recommend that you do not skip this ingredient. If you don’t have maple syrup, feel free to use honey if that aligns with your values.
  • We like Mori-Nu brand silken tofu, but you can use a refrigerated silken tofu product as well. Refrigerated silken tofu will contain more water and should be drained as well as possible. The Mori-Nu tofu will need to be drained before use as well. Be aware that the refrigerated silken tofu also comes in a larger container.
  • If the sour cream seems thin, it will thicken in the refrigerator over time. Draining your tofu well will help it to not be as thin.
  • To make regular tofu mayo, replace the lime juice with lemon juice, use powdered garlic instead of fresh garlic, and omit the chipotle chili powder, smoked paprika and cumin.
  • If your sour cream gets too thick in the refrigerator, you can thin it out with a little bit of plant milk.

  • 1 (12 oz) box Mori-Nu extra firm tofu, drained
  • 1 lime, juiced, about 2-3 tablespoons
  • 1 clove garlic, minced or 1/2 tsp garlic powder
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • tsp chipotle chili powder, or more if you like it spicy
  • ½ tsp smoked paprika
  • ¼ tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp onion powder
  • ½ tso sea salt, omit or use less if desired
