Hey, friends! Stephanie here! When we’re not in the kitchen cooking or busy with Plantiful Table, we’re also running multiple businesses. So, it’s important to us that these recipes are made with common ingredients, come together in a short amount of time, and are beginner-friendly. Chef AJ’s Creamy Cauliflower Bisque ticks all these boxes perfectly, making it an ideal addition to our blog.

This recipe stood out because it transforms simple ingredients into a rich and flavorful bisque that’s both comforting and nutritious. The ease of preparation means that even on our busiest days, we can whip up a satisfying meal without any hassle. Plus, it’s entirely plant-based oil-free, and dairy-free, which aligns with our commitment to healthy, whole-food cooking.

Key Ingredients

Let’s take a look at the key ingredients for this and their nutritional benefits:

  • Cauliflower forms the base of this bisque, offering a creamy texture and mild flavor. It’s also packed with vitamins C and K, as well as fiber, making it a nutritious addition.
  • Onion adds a depth of flavor and natural sweetness to the bisque. Onions are also rich in antioxidants and have anti-inflammatory properties.
  • Garlic infuses the soup with a savory, aromatic quality. It’s not only delicious but also boosts the immune system and has heart-healthy benefits.
  • Vegetable Broth serves as the flavorful liquid base, enhancing the overall taste while keeping the bisque light and plant-based.
  • Nutritional Yeast gives the bisque a cheesy, umami flavor. It’s a great source of B vitamins and provides a protein boost.
  • White Sweet Potatoes are blended into the soup to create a rich, creamy consistency without the need for dairy. They’re also high in fiber, vitamins A and C, and add a natural sweetness to the bisque.

The Process

Start by preparing the ingredients: chop cauliflower into florets, dice the onion, mince the cloves of garlic, and peel and cube the white sweet potatoes.

Place the cauliflower, onion, garlic, sweet potatoes, and vegetable broth into the Instant Pot, ensuring everything is well distributed.

Secure the lid on the Instant Pot, set it to high pressure, and cook for 10 minutes. Once the cooking cycle is complete, carefully perform a quick release of the pressure by turning the valve.

After the pressure has been released, open the lid and add the plant milk, mustard, and nutritional yeast to the pot. Use an immersion blender to puree the soup directly in the pot until it reaches a smooth and creamy consistency.

If you prefer a thinner consistency, you can add more plant milk or vegetable broth. Ladle the soup over the rice in bowls for a hearty and satisfying meal. Enjoy the rich, velvety texture and the delightful blend of flavors in this nutritious bisque!

Recipe Tips

  • If you don’t have an Instant Pot, you can make this bisque on the stovetop. Simply simmer the ingredients in a large pot until the cauliflower and sweet potatoes are tender, then proceed with blending.
  • Feel free to substitute white sweet potatoes with regular potatoes or butternut squash for a different flavor and texture.
  • Add a pinch of nutmeg or smoked paprika for extra depth of flavor. If you prefer a bit of heat, a dash of cayenne pepper works wonderfully.
  • For a chunkier bisque, blend only half of the soup and leave the rest with pieces of cauliflower and sweet potatoes intact.
  • Top the bisque with freshly chopped herbs, such as parsley or chives, for added freshness and color. You can also sprinkle some toasted seeds or nuts for a bit of crunch.
