Why You’ll Love This Recipe

Hey there, lovely readers! Stephanie here! Today, I’m excited to spill the beans on why we’re absolutely smitten with Chef AJ’s House Dressing.

First off, let me tell you, when we’re not bustling in the kitchen concocting deliciousness or knee-deep in Plantiful Table endeavors, we’re busy running multiple businesses. With all that on our plates, it’s crucial to us that the recipes we make are made with pantry staples, come together in a flash, and are as beginner-friendly as they come. Chef AJ’s House Dressing checks all those boxes! It’s a simple yet flavorful blend that adds that extra oomph to any salad or veggie dish without making us break a sweat. So if you’re like us, craving something scrumptious but short on time, this dressing is about to become your salads’ bestie!

Key Ingredients

Let’s dive into the star players of our Chef AJ’s House Dressing recipe and uncover why they’re the MVPs both in flavor and nutrition:

  • Tahini is a creamy sesame paste that not only lends a rich, nutty flavor to the dressing but also brings a hefty dose of healthy fats, protein, and minerals like calcium and iron, making it a nutritious powerhouse.
  • Bursting with tangy brightness, fresh lemon juice elevates the flavor profile of the dressing while providing a zingy kick. Plus, it’s packed with vitamin C and antioxidants, offering a refreshing and immune-boosting boost.
  • Adding depth and savory umami notes, tamari, a gluten-free soy sauce, enhances the complexity of the dressing. Beyond its flavor, tamari contributes a dose of amino acids and minerals, making it a flavorful yet nutritious addition.
  • Stone ground mustard contributes distinctive sharpness and subtle spice, and brings a delightful complexity to the dressing, creating a harmonious balance of flavors. Additionally, mustard seeds are rich in antioxidants, fiber, and selenium, offering both taste and nutritional benefits.
  • Maple syrup gives the dressing a touch of natural sweetness, and rounds out the dressing, smoothing any sharp edges of the tahini and lemon juice. Alongside its sweet taste, maple syrup delivers antioxidants, manganese, and trace minerals, making it a wholesome and flavorful sweetener option.

The Process

This dressing couldn’t be easier to make – no tofu to press or cashews to soak. Just add all of the ingredients to a blender, secure the lid and press go! It’s just that easy.

Recipe Tips

  • This is a yummy oil-free dressing, however keep in mind that it is not fat-free.  Tahini contains fat. To cut down on the fat content, you could cut the tahini in half without sacrificing a lot of flavor.
  • To cut down on the sodium content, you could also decrease the tamari by half. You can also use soy sauce, however, we recommend the low sodium versions of whichever one you use.
  • Adding a clove or two of garlic would amplify the flavor. If you find raw garlic a little spicy for your taste, roast it first. Roasted garlic is so sweet and delicious. You could also use garlic powder to save some time.
  • Add more maple syrup if that suits your taste.
  • Fresh lime juice also works in place of the lemon juice.
  • This dressing is amazing on any type of salad, grain bowl, sandwich or wrap.

We do not recommend freezing this dressing.

Can I use soy sauce instead of tamari in this recipe?

Yes, tamari is the gluten-free version of soy sauce and contains less sodium than soy sauce. We also recommend the low-sodium version of whichever one you choose.

I don’t have a Vitamix. Can I use a regular, non-fancy blender?

Yes! There are no nuts to grind and a regular blender should get the job done just as well for this one.
