Recipe Tips
- While this recipe is delicious as is, feel free to get creative with toppings and sides. Consider adding crushed tortilla chips, avocado, or plant-based sour cream for extra flavor and texture.
- And don’t forget to store any leftovers properly to keep them fresh for later use.

Keepin’ It Fresh: How to Store the Red Lentil Chili
For storing leftovers, let the chili cool completely before transferring it to a glass container with a lid. Mason jars are a convenient option, especially with plastic lids for easy storage. If freezing, cool the chili and store it in freezer-safe containers or ziplock bags for future use.

The Verdict
This high fiber nutrition bomb of a soup hit the spot for us. In our quest to make a bunch of Chef AJ’s Instant Pot recipes, we discovered just how handy it is to have frozen soup in the freezer to eat later when you’re in a pinch. The soup very much reminded us of the flavor of black bean enchiladas… and who doesn’t love those? We would definitely make this one again.
