Ingredients

  • 1 head cauliflower about 2 lbs
  • 2 pounds white sweet potatoes
  • 6 cups vegetable broth low or no-sodium
  • 1 large white onion
  • 8 cloves garlic peeled
  • 2 tbsp dried dill
  • 2 tbsp salt-free seasoning Benson's Table Tasty
  • 1 tbsp smoked paprika
  • ½ tsp chipotle powder
  • 4 tbsp stone ground mustard Westbrae - salt-free
  • 4 tbsp nutritional yeast
  • 3-4 cups unsweetened plant milk

Instructions

  • Place all ingredients except for the plant milk, mustard and nutritional yeast in the IP and cook on high pressure for 10 minutes.
  • Release pressure and add plant milk, mustard and nutritional yeast.
  • Puree the soup with an immersion blender right in the pot.
  • Delicious served over black, red or wild rice.
