Creamy Cauliflower Bisque (Review)

Immersion blender
- 1 head cauliflower about 2 lbs
- 2 pounds white sweet potatoes
- 6 cups vegetable broth low or no-sodium
- 1 large white onion
- 8 cloves garlic peeled
- 2 tbsp dried dill
- 2 tbsp salt-free seasoning Benson's Table Tasty
- 1 tbsp smoked paprika
- ½ tsp chipotle powder
- 4 tbsp stone ground mustard Westbrae - salt-free
- 4 tbsp nutritional yeast
- 3-4 cups unsweetened plant milk
Place all ingredients except for the plant milk, mustard and nutritional yeast in the IP and cook on high pressure for 10 minutes.
Release pressure and add plant milk, mustard and nutritional yeast.
Puree the soup with an immersion blender right in the pot.
Delicious served over black, red or wild rice.
