- 2 pounds white sweet potatoes
- 6 cups vegetable broth, low or no-sodium
- 1 large white onion
- 8 cloves garlic, peeled
- 2 tbsp dried dill
- 2 tbsp salt-free seasoning, Benson's Table Tasty
- 1 tbsp smoked paprika
- ½ tsp chipotle powder
- 4 tbsp stone ground mustard, Westbrae – salt-free
- 4 tbsp nutritional yeast
- 3-4 cups unsweetened plant milk
Instructions
- Place all ingredients except for the plant milk, mustard and nutritional yeast in the IP and cook on high pressure for 10 minutes.
- Release pressure and add plant milk, mustard and nutritional yeast.
- Puree the soup with an immersion blender right in the pot.
- Delicious served over black, red or wild rice.
