Why You’ll Love This Recipe

Hey there! I’m Lauren, and I’m excited to share this Easy Blueberry Chia Pudding recipe with you. We chose this recipe because it’s a perfect fit for our busy lifestyle. When we’re not in the kitchen cooking or busy with Plantiful Table, we’re also running multiple businesses. So it’s crucial for us to have recipes that use common ingredients, come together quickly, and are beginner-friendly. This pudding ticks all those boxes and more!

Not only is this recipe super simple to make, but it’s also packed with nutritious ingredients that keep us fueled throughout our busy days. We love that it requires minimal prep time and can be made ahead, making it ideal for meal prepping. Plus, the combination of blueberries, chia seeds, and a hint of lemon is just divine. We hope you’ll enjoy it as much as we do!

Key Ingredients

  • Wild blueberries are the little blueberries that burst with flavor and antioxidants, making them a delicious and nutritious addition to our pudding. They are more nutritious than the regular blueberry. Go wild if you can!
  • Chia seeds are known for their high fiber and omega-3 content and they add a nice texture, thickness and help keep you feeling full longer.
  • Lemon zest pairs perfectly with the sweetness of the blueberries and brings a bright, fresh flavor to the pudding.
  • Maple syrup is our preferred natural sweetener to add just the right amount of sweetness without any refined sugars, keeping the pudding healthy and delicious.
  • Coconut milk or soy milk are two options that provide a creamy base for the pudding. Coconut milk adds a subtle tropical flavor, while soy milk gives an extra boost of protein.

The Process

Making the Easy Blueberry Chia Pudding couldn’t be easier! First you add the blueberries, coconut or soy milk, lemon juice and zest, maple syrup, vanilla, and salt to a blender. Blend until the mixture is smooth and well combined.

Place the chia seeds in a separate medium-sized bowl. Pour in the blended blueberry milk and mix together with a whisk or spatula until fully combined.

Place the mixture in the fridge to set. After 5 minutes, give the chia pudding a mix and allow it to continue setting for an additional 10 minutes before serving. Give the mixture another stir before serving and top as desired.

Recipe Tips

Here are some tips to help you customize this recipe to your liking:

  • Adjust the sweetness to your liking by adding more or less maple syrup.
  • Modify the amount of lemon zest to suit your taste preferences. Although we think the combination of lemon and blueberries is fantastic!
  • Not a fan of blueberries? No problem! This would be great with strawberries, raspberries, bananas—try it with your favorite fruit!
  • Feel free to use soy milk instead of coconut milk for an extra protein boost.
  • For best results, make the recipe the night before to allow the chia seeds to fully soak up the liquid, or follow the directions if you plan on eating it the same day. This recipe is perfect for meal prepping!
