- 1 large Red onion thinly sliced
- ¾ cup Apple cider vinegar
- ¼ cup Water
- 1 tsp Sea salt
- 1 ½ tbsp Maple syrup
Bring the vinegar, water, salt and maple syrup to a simmer in a saucepan over medium-high heat. Whisk it a few times to combine the ingredients well.
While the pickling liquid is heating, use a mandolin to slice the red onion very thinly.
Place the onions in a pint-sized mason jar and press down to be sure they all fit.
Pour the hot pickling liquid on the onions in the jar, using a funnel if needed. Push any onions not covered with liquid down until submerged in the liquid.
Secure the lid and shake the onions to be sure they are all coated with the liquid.
Let the onions marinate in the refrigerator for at least 30 minutes before serving.
